Rhubarb Compote

Strenuous morning.   Took a cup of tea to the garden.  Picked at weeds.  Then contemplated the world from under the Crimson King Maple.
The girls are coming tomorrow for tea and muffins, so I picked some rhubarb and made Rhubarb Compote to go along with the muffins.
Rhubarb Compote
4 cups rhubarb cut in 1/2 inch sections
1/4 cup sugar
1/4 cup water
1/2 tsp cinnamon
Place all ingredients in a saucepan and bring to a boil.  Stir constantly for approx 10 min.  the Rhubarb will turn soft and come apart and the mixture will thicken.
Let cool and pour into a glass container and store in the fridge.
*can be made in increments .... 1/4 of sugar and water to each 2 cups of Rhubarb depending on how vigorous your rhubarb patch grows.
